Garlic Butter Steak Bites and Potatoes

For the Steak Bites:

1 lb sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

For the Potatoes:

1 lb baby potatoes, halved

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried rosemary

Salt and pepper, to taste

Instructions
 

Cook the Potatoes:

    - Preheat your oven to 425°F (220°C).

      - In a large mixing bowl, combine the halved baby potatoes, olive oil, garlic powder, dried rosemary, salt, and pepper. Toss until the potatoes are well-coated.

        - Spread the potatoes in a single layer on a baking sheet lined with parchment paper.

          - Roast in the preheated oven for 20-25 minutes, or until golden brown and tender, flipping halfway through.

            Prepare the Steak Bites:

              - While the potatoes are roasting, heat 2 tablespoons of butter in a large skillet over medium-high heat.

                - Season the steak bites with salt, pepper, smoked paprika, and dried thyme.

                  - Add the steak cubes to the hot skillet in a single layer (you may need to do this in batches to avoid overcrowding).

                    - Sear the steak bites for about 2-3 minutes on each side for medium-rare, or longer if desired. Remove from the skillet and set aside.

                      - In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for about 1 minute until fragrant.

                        - Return the steak bites to the skillet, tossing to coat them in the garlic butter. Cook for another minute to allow the flavors to meld.

                          Serve:
