1 lb (450g) flank steak, cut into bite-sized pieces

1 lb (450g) baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prep the Potatoes: In a medium pot, bring salted water to a boil. Add the halved baby potatoes and cook until fork-tender, about 10-12 minutes. Drain and set aside.

    Sear the Steak: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the steak pieces. Season with salt and pepper. Sear the steak for about 3-4 minutes until browned and cooked to your desired doneness. Remove the steak from the skillet and set aside.

      Cook the Potatoes: In the same skillet, add another tablespoon of olive oil. Add the boiled potatoes, cut side down. Cook for 5-7 minutes until they are golden and crispy.
