Ingredients

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped (plus more for garnish)

1 teaspoon dried Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

Zest of 1 lemon

Juice of 1/2 lemon

Pinch of red pepper flakes (optional)

Instructions

Marinate the Chicken: In a bowl, combine the chicken pieces with olive oil, lemon zest, lemon juice, Italian seasoning, salt, and pepper. Let it marinate for at least 30 minutes for maximum flavor.

Heat the Butter: In a large skillet, melt the butter over medium heat until it's foamy.

Cook the Chicken: Add the marinated chicken bites to the skillet, making sure they’re in a single layer. Cook for about 4-5 minutes on one side until golden brown.

Add Garlic: Flip the chicken bites over and add the minced garlic to the skillet. Cook for another 4-5 minutes, stirring occasionally, until the chicken is cooked through and the garlic is fragrant.

Finish and Serve: Once the chicken bites are cooked, sprinkle with chopped parsley and red pepper flakes if desired. Toss to combine and remove from heat.

Garnish: Serve warm with extra parsley sprinkled on top. Pair with crusty bread or over a bed of rice or pasta to soak up the delicious garlic butter sauce.
