1.5 lbs chicken thighs (boneless, skinless)

1 lb baby potatoes (halved)

4 tablespoons unsalted butter

5 cloves garlic (minced)

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper (to taste)

1 cup chicken broth (low sodium)

2 tablespoons olive oil

Fresh parsley (chopped, for garnish)

Juice of 1 lemon

Instructions
 

Prepare the Chicken: Season the chicken thighs with salt, pepper, paprika, and dried thyme on both sides.

    Cook the Potatoes: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the halved baby potatoes cut-side down and cook for about 5-7 minutes until they are golden brown. Stir occasionally to ensure even cooking. Once golden, remove the potatoes from the skillet and set aside.

      Sear the Chicken: In the same skillet, add an additional tablespoon of butter. Once melted, add the seasoned chicken thighs and sear for about 5 minutes on each side until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Make Garlic Butter Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Be careful not to burn it. Pour in the chicken broth and scrape any browned bits from the bottom of the pan.

          Combine Ingredients: Return the chicken and potatoes to the skillet. Add the remaining butter and lemon juice. Stir gently until everything is well coated in the garlic butter sauce.
