Garlic Bread Grilled Cheese

4 slices of garlic bread (store-bought or homemade)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

2 tablespoons unsalted butter

1 teaspoon garlic powder

Fresh parsley, chopped (for garnish, optional)

Prepare the Garlic Bread: If using homemade garlic bread, slice your bread and spread a generous layer of garlic butter on each slice. If using store-bought, simply ensure it is ready to grill.

    Heat the Pan: In a large skillet, melt 1 tablespoon of butter over medium heat.

      Assemble the Sandwich: Place two slices of garlic bread (butter-side down) in the skillet. Sprinkle half of the cheddar and mozzarella cheese evenly over each slice.

        Add More Cheese: Once the cheese starts to melt (about 2-3 minutes), layer the remaining cheese on top, and then cover with the remaining slices of garlic bread (butter-side up).

          Grill: Cook for about 4-5 minutes until the bottom slices are golden brown and the cheese has melted. Carefully flip the sandwiches over, adding the remaining tablespoon of butter around the edges if needed, and grill for another 4-5 minutes until the other side is also golden brown and crispy.

            Serve: Remove from the pan, and let cool for a minute. Slice the sandwiches in half to expose the gooey cheese inside. Garnish with fresh parsley if desired.
