4 ripe but firm bananas

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp baking powder

1/2 tsp salt

1/2 cup cold sparkling water (or regular water)

1/2 tsp vanilla extract

Oil for frying (vegetable or coconut oil)

1/4 cup unsalted butter

1/4 cup brown sugar

1 tsp ground cinnamon

A pinch of salt

Chopped nuts (optional, for garnish)

Fresh mint leaves (optional, for garnish)

Instructions
 

Prepare the Bananas:

    - Peel the bananas and slice them diagonally into thick slices, about 1 inch wide. Set aside.

      Make the Batter:

        - In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Whisk together until combined.

          - Gradually add in the cold sparkling water and vanilla extract, mixing until just combined. Be careful not to overmix; a few lumps are okay.

            Heat the Oil:

              - In a deep skillet or frying pan, pour enough oil to submerge the bottom of the pan about 1 inch deep. Heat the oil over medium-high heat until it reaches 350°F (175°C).

                Fry the Bananas:

                  - Dip each banana slice into the batter, allowing any excess batter to drip off, then carefully place it into the hot oil.

                    - Fry in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy.

                      - Remove the fried bananas with a slotted spoon and transfer them to a plate lined with paper towels to absorb excess oil.

                        Prepare the Cinnamon Butter Sauce:

                          - In a small saucepan, melt the unsalted butter over medium heat. Once melted, add the brown sugar, ground cinnamon, and a pinch of salt.

                            - Stir until the mixture is smooth and the sugar has dissolved. Allow it to cook for an additional minute but do not let it boil.

                              Serve:

                                - Drizzle the warm cinnamon butter sauce over the fried bananas.
