Fiery Chicken Ramen with Creamy Garlic Sauce

2 boneless, skinless chicken thighs

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon gochujang (Korean red chili paste)

2 cloves garlic, minced

4 cups chicken broth

2 packs of instant ramen noodles (discard the seasoning packets)

1 cup baby spinach

1 cup shiitake mushrooms, sliced

1 tablespoon rice vinegar

1 tablespoon green onions, chopped (for garnish)

2 soft-boiled eggs (optional)

For the Creamy Garlic Sauce:

1/2 cup mayonnaise

2 tablespoons sour cream

2 cloves garlic, finely minced

1 tablespoon lemon juice

Salt and pepper to taste

Instructions
 

Marinate the Chicken: In a small bowl, combine soy sauce, sesame oil, gochujang, and minced garlic. Add the chicken thighs, ensuring they are fully coated. Marinate for at least 30 minutes.

    Cook the Chicken: Heat a skillet over medium heat. Add the marinated chicken thighs, cooking for about 6-7 minutes on each side until fully cooked and slightly caramelized. Remove from the pan and allow to rest before slicing.

      Prepare the Broth: In the same skillet, pour in the chicken broth and bring it to a simmer. Add rice vinegar, sliced shiitake mushrooms, and baby spinach; cook until the mushrooms are tender.

        Cook the Ramen: In a separate pot, bring water to a boil and stir in the ramen noodles. Cook according to package instructions, usually around 3-4 minutes, then drain.

          Make the Creamy Garlic Sauce: In a bowl, mix together the mayonnaise, sour cream, minced garlic, lemon juice, salt, and pepper until smooth. Adjust seasoning to taste.

            Assemble the Ramen: In serving bowls, place a portion of the cooked ramen noodles. Ladle the hot broth topped with mushrooms and spinach over the noodles. Slice the chicken thighs and arrange them on top.
