Fiery Chicken Ramen with Creamy Garlic Sauce

2 boneless, skinless chicken thighs

1 tablespoon soy sauce

1 tablespoon sriracha (or to taste)

1 tablespoon sesame oil

4 cups chicken broth

2 packets of ramen noodles (discard the seasoning packets)

1 cup bok choy, chopped

1 cup mushrooms, sliced (shiitake or button mushrooms work well)

2 green onions, chopped

3 cloves garlic, minced

1/2 cup heavy cream

1 tablespoon lime juice

Salt and pepper, to taste

Fresh cilantro, for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine soy sauce, sriracha, and sesame oil. Add the chicken thighs, ensuring they are well-coated. Let them marinate for at least 30 minutes in the fridge.

    Prepare the Broth: In a large pot, bring the chicken broth to a simmer. Add the marinaded chicken thighs directly into the broth and cook for about 15 minutes over medium heat until cooked through. Remove the chicken, let it cool slightly, then shred it using two forks.

      Cook the Ramen: In the same broth, add the ramen noodles and cook according to package instructions (usually about 3-4 minutes). When they are almost done, add the chopped bok choy and mushrooms, cooking for an additional 2 minutes until they are tender.

        Make the Creamy Garlic Sauce: In a small saucepan, heat a little oil over medium heat. Add the minced garlic and sauté until fragrant (about 1 minute). Slowly pour in the heavy cream while stirring, then add lime juice. Season with salt and pepper. Let it simmer for 2-3 minutes to thicken, stirring frequently.

          Combine and Serve: Strain the ramen and vegetables, reserving the broth if you like it soupy. Distribute the ramen and veggies among bowls, top with shredded chicken, and drizzle the creamy garlic sauce. Garnish with chopped green onions and fresh cilantro.
