Fiery Chicken Ramen with Creamy Garlic Sauce

Ingredients
  

2 boneless, skinless chicken thighs

4 cups chicken broth

2 packs of instant ramen noodles (discard the seasoning packets)

1 tablespoon sesame oil

3 cloves garlic, minced

1 inch ginger, grated

2 tablespoons sriracha (adjust to taste)

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 tablespoon hoisin sauce

1 cup of baby spinach

1/2 cup sliced green onions

2 soft-boiled eggs (optional)

Fresh cilantro for garnish

Salt and pepper to taste

Creamy Garlic Sauce:

1/2 cup mayonnaise

2 tablespoons Greek yogurt

2 cloves roasted garlic (or sauté fresh garlic until lightly browned)

1 teaspoon lemon juice

Pinch of salt and pepper

Prepare the Creamy Garlic Sauce: In a small bowl, combine the mayonnaise, Greek yogurt, roasted garlic, lemon juice, and a pinch of salt and pepper. Mix well and set aside.

    Cook the Chicken: In a large pot, heat the sesame oil over medium heat. Season the chicken thighs with salt and pepper, then add them to the pot. Sear each side until golden brown, about 4-5 minutes per side.

      Add Aromatics: Once the chicken is cooked through, remove it from the pot and set aside. In the same pot, add minced garlic and ginger, cooking for about 1 minute until fragrant.
