8 oz. penne pasta

2 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

2 cups baby spinach

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp dried Italian herbs (basil, oregano, thyme)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Cook the Pasta: In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian herbs on both sides.

      Sear the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the chicken breasts and sear for about 5-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and let rest for a few minutes before slicing it into strips.
