EASY STUFFED BELL PEPPERS

4 large bell peppers (any color)

1 cup cooked quinoa (or rice)

1 cup black beans, drained and rinsed

1 cup corn (canned or frozen)

1 cup diced tomatoes (fresh or canned)

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheese (cheddar or mozzarella)

2 tablespoons olive oil

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prep the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.

      Make the Filling: In a large bowl, combine the cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, pepper, and half of the shredded cheese. Mix well until all ingredients are evenly incorporated.

        Stuff the Peppers: Carefully spoon the filling into each bell pepper, packing it down gently but ensuring not to overflow.

          Bake: Cover the baking dish with foil and bake for 25 minutes. After 25 minutes, remove the foil and sprinkle the remaining cheese on top of each pepper.

            Final Bake: Return to the oven uncovered and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the peppers are tender.

              Serve: Once baked, remove from the oven and let cool for a few minutes. Garnish with fresh cilantro if desired and serve warm.
