Ingredients

1 cup cooked rice (white or brown)

1 cup cooked chicken, shredded (rotisserie chicken works great)

1 cup corn kernels (fresh or frozen)

1/2 cup diced tomatoes (canned or fresh)

1/2 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon olive oil

1/4 cup chopped cilantro (optional)

1 avocado, sliced (for topping)

Lime wedges (for serving)

Instructions

In a large skillet, heat the olive oil over medium heat. Add the corn kernels to the skillet and sauté for about 5-7 minutes, or until they are slightly caramelized and heated through.

Add the shredded chicken to the skillet along with the chili powder, garlic powder, salt, and pepper. Stir everything together and cook for another 2-3 minutes until the chicken is warmed throughout.

In a serving bowl, layer the cooked rice at the bottom. Next, spoon the corn and chicken mixture over the rice.

Top the dish with diced tomatoes and sliced avocado.

Garnish with fresh cilantro if using, and serve with lime wedges on the side for an extra burst of flavor.
