Easy Spinach & Ricotta Stuffed Shells

Ingredients
  

20 large pasta shells

2 cups ricotta cheese

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

3 cups marinara sauce

Fresh basil, for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Cook the pasta shells according to package instructions until al dente. Drain and set aside, but make sure to drizzle a little olive oil to prevent sticking.

      Prepare the filling: In a large bowl, combine the ricotta cheese, chopped spinach, half of the mozzarella cheese, Parmesan cheese, egg, minced garlic, olive oil, oregano, salt, and pepper. Mix until well combined.

        Stuff the shells: Carefully fill each cooked pasta shell with the ricotta and spinach mixture. Place the stuffed shells in a baking dish.

          Pour marinara sauce: Spread the marinara sauce evenly over the stuffed shells, ensuring each shell is covered. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

              Garnish and serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil if desired, then serve warm.
