20 jumbo pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese (plus extra for topping)

1/2 cup grated Parmesan cheese

1 egg, beaten

2 cloves garlic, minced

1/4 teaspoon nutmeg

1/4 teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Salt to taste

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot, bring salted water to a boil. Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool.

      Prepare the Filling: In a medium pan over medium heat, sauté minced garlic until fragrant (about 1-2 minutes). Add in the chopped spinach and cook until wilted. Remove from heat.

        Mix the Filling: In a large bowl, combine the cooked spinach and garlic mixture, ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, beaten egg, nutmeg, black pepper, and salt. Mix until well combined.

          Stuff the Shells: Spoon the cheese mixture into each jumbo shell, about a tablespoon per shell. Place the stuffed shells seam-side up in a baking dish.

            Add the Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring they are well covered. Sprinkle remaining mozzarella cheese on top.

              Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
