Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

12 large pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 jar (24 oz) marinara sauce

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Boil a large pot of salted water. Add the pasta shells and cook according to package instructions (usually about 9-11 minutes) until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella cheese, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper. Mix well until fully integrated.

        Fill the Shells: Carefully stuff each pasta shell with a generous amount of the spinach and ricotta filling, about 2 tablespoons per shell.

          Assemble the Dish: Spread a thin layer of marinara sauce on the bottom of a baking dish. Place the stuffed shells upright in the dish, then pour the remaining marinara sauce over the top. Sprinkle with the remaining mozzarella cheese.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.

              Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm.
