Ingredients

20 large pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

3 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta Shells: In a large pot of salted boiling water, cook the pasta shells for about 8-10 minutes until al dente. Drain and set aside to cool.

Prepare the Filling: In a mixing bowl, combine the chopped spinach, ricotta cheese, half of the mozzarella cheese, grated Parmesan, beaten egg, garlic powder, onion powder, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Fill the Shells: Take each cooled pasta shell and fill it generously with the spinach and ricotta mixture. Place the filled shells in a baking dish.

Add the Marinara Sauce: Pour the marinara sauce evenly over the stuffed shells, ensuring they are well covered. Sprinkle the remaining mozzarella cheese on top.

Bake: Cover the baking dish with aluminum foil (to prevent over-browning) and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve warm and enjoy your healthy veggie dinner!
