1 pound boneless, skinless chicken thighs, cut into 1-inch cubes

1/4 cup soy sauce

2 tablespoons fish sauce

2 tablespoons lime juice (freshly squeezed)

2 tablespoons brown sugar

2 cloves garlic, minced

1 teaspoon ground ginger

1 teaspoon red pepper flakes (adjust for spice preference)

Fresh basil and cilantro leaves for garnish

Skewers (wooden or metal)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon brown sugar

1 teaspoon grated fresh ginger

1-2 teaspoons chili paste (optional, adjust for spice)

Chopped peanuts and cilantro for garnish

Instructions
 

Marinate the Chicken:

    - In a large bowl, whisk together the soy sauce, fish sauce, lime juice, brown sugar, minced garlic, ground ginger, and red pepper flakes.

      - Add the chicken cubes to the marinade and ensure they are well coated. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours for maximum flavor.

        Prepare the Peanut Sauce:

          - In a medium bowl, combine the creamy peanut butter, coconut milk, soy sauce, lime juice, brown sugar, grated fresh ginger, and chili paste.

            - Whisk until smooth and well blended. Adjust the consistency with more coconut milk if needed. Set aside.
