Easy Chipotle Ranch Grilled Chicken Burrito

Ingredients
  

2 boneless, skinless chicken breasts

1/4 cup chipotle ranch dressing (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 large flour tortillas

1 cup cooked brown rice (or white rice)

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh, canned, or frozen)

1 cup shredded sharp cheddar cheese

1 cup fresh spinach or lettuce

1/2 avocado, sliced (optional)

Fresh cilantro for garnish (optional)

Lime wedges for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken breasts, chipotle ranch dressing, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well to coat the chicken. Allow it to marinate for at least 30 minutes (or up to 2 hours) in the refrigerator for best flavor.

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade, letting any excess drip off. Grill the chicken for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from grill and let rest for 5 minutes before slicing.

      Prepare the Burrito Filling: In a large bowl, combine the cooked rice, black beans, corn, and shredded cheddar cheese. Toss to mix.

        Assemble the Burrito: Lay a tortilla flat on a clean surface. In the center of the tortilla, add a generous scoop of the rice and bean mixture, followed by sliced grilled chicken and fresh spinach or lettuce. If using, add avocado slices and sprinkle with fresh cilantro.

          Wrap It Up: Fold the sides of the tortilla inward, then roll from the bottom up tightly to form a burrito. Make sure to keep all the fillings tucked inside.
