2 boneless, skinless chicken breasts

1 tablespoon olive oil

2 tablespoons chipotle ranch dressing (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper to taste

4 large flour tortillas

1 cup cooked rice (white or brown)

1 cup black beans, drained and rinsed

1 cup corn (canned or thawed if frozen)

1 cup shredded cheddar cheese

1 cup pico de gallo or fresh salsa

1 cup fresh spinach or lettuce

Optional: avocado slices and sour cream for serving

Marinate the Chicken: In a bowl, combine the olive oil, chipotle ranch dressing, garlic powder, paprika, cumin, salt, and pepper. Add the chicken breasts and coat them well with the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
