Easy Asian Cucumber Salad

With fresh ingredients like English cucumbers, cilantro, and a tangy dressing of rice vinegar, soy sauce, and sesame oil, this salad is refreshing and full of flavor. Ingredients
  

2 large English cucumbers, thinly sliced

1 teaspoon salt

2 tablespoons rice vinegar

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon sugar

1 small clove garlic, minced

1 teaspoon fresh ginger, grated

2 tablespoons chopped fresh cilantro

1 tablespoon sesame seeds (toasted, for garnish)

Red pepper flakes (optional, for heat)

Instructions
 

In a large mixing bowl, combine the sliced cucumbers and salt. Toss well to coat and let it sit for about 15 minutes to draw out excess moisture.

    Meanwhile, in a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, minced garlic, and grated ginger until the sugar is dissolved.

      After 15 minutes, drain the cucumbers and gently pat them dry with a paper towel to remove excess salt and moisture.

        Pour the dressing over the cucumbers and toss until all slices are coated.

          Add chopped cilantro and mix gently to combine.

            Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.

              Just before serving, sprinkle with toasted sesame seeds and red pepper flakes if desired.
