2 large English cucumbers

1 tablespoon kosher salt

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon sugar (or honey)

1 teaspoon grated fresh ginger

1 garlic clove, minced

2 tablespoons chopped fresh cilantro

1 tablespoon sesame seeds

1 red chili pepper, thinly sliced (optional, for heat)

1/4 cup sliced green onions

Prepare the Cucumbers: Start by washing the cucumbers thoroughly. Cut them into thin slices (about 1/8 inch thick), and then place them in a colander. Sprinkle the kosher salt over the cucumber slices and toss to coat evenly. Let them sit for about 15-20 minutes to draw out excess moisture.

    Make the Dressing: In a medium bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, grated ginger, and minced garlic until the sugar is dissolved and the mixture is well combined.

      Rinse and Drain: After the cucumbers have rested, rinse them under cold water to remove the salt. Pat them dry using a clean kitchen towel or paper towels to remove excess moisture.
