_For the Pastry:_

3 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking powder

1 tablespoon curry powder

1/2 cup unsalted butter, cold and cubed

1/2 cup water, chilled

_For the Beef Filling:_

1 lb ground beef

1 medium onion, finely chopped

2 cloves garlic, minced

1 Scotch bonnet pepper, finely chopped (adjust to taste)

1 teaspoon fresh thyme leaves

1 teaspoon allspice

1 tablespoon soy sauce

1 teaspoon Worcestershire sauce

Salt and pepper to taste

2 green onions, chopped

1/4 cup beef broth (optional for moisture)

Instructions
 

Prepare the Pastry:

    - In a large bowl, mix together the flour, salt, baking powder, and curry powder.

      - Add in the cold, cubed butter and rub it into the flour using your fingers until you achieve a coarse texture resembling breadcrumbs.

        - Gradually add chilled water, mixing with your hands until a dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.

          Make the Filling:

            - In a skillet over medium heat, add the ground beef, breaking it apart with a spoon. Cook until browned.

              - Drain excess fat, then add onion, garlic, Scotch bonnet pepper, thyme, allspice, soy sauce, Worcestershire sauce, salt, and pepper.

                - Cook for about 5-7 minutes until the onions are softened. If using, add beef broth for moisture.

                  - Stir in the green onions and remove from heat. Let the filling cool while you roll out the pastry.

                    Assemble the Patties:

                      - Preheat your oven to 375°F (190°C).

                        - On a floured surface, roll out the chilled pastry to about 1/8-inch thickness. Cut out circles using a 5-inch cutter or the rim of a bowl.

                          - Place about 2 tablespoons of the beef filling in the center of each circle.

                            - Fold the pastry over to create a half-moon shape. Press the edges together to seal, then crimp with a fork for an extra seal.

                              Bake the Patties:

                                - Place the patties on a baking sheet lined with parchment paper. Brush the tops with an egg wash (1 beaten egg mixed with 1 tablespoon water) for a golden finish.

                                  - Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and flaky.

                                    Serve:

                                      - Allow the patties to cool for a few minutes before serving. Enjoy them warm as a snack or as part of a meal with your favorite dipping sauce.
