1 lb boneless, skinless chicken thighs

1 can (15 oz) black beans, rinsed and drained

1 cup long-grain white rice

2 cups chicken broth

1 large onion, diced

4 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Juice of 1 lime

2 tablespoons olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sliced avocado (for topping)

Optional: Hot sauce for serving

Marinate the Chicken: In a bowl, combine the chicken thighs with lime juice, cumin, smoked paprika, oregano, salt, and pepper. Allow to marinate for at least 30 minutes (or up to 2 hours in the fridge for more flavor).

    Cook the Rice: In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the rice and toast for about 2 minutes, stirring frequently, until slightly golden. Add chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until rice is fluffy and liquid is absorbed. Remove from heat and let it sit, covered, for another 5 minutes.

      Sauté Vegetables: While the rice is cooking, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and red bell pepper, cooking until softened, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Cook the Chicken: Add the marinated chicken thighs to the skillet with the sautéed vegetables. Cook for about 5-7 minutes per side, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and let it rest for a few minutes, then slice it into strips.

          Add Black Beans: To the skillet with the vegetables, add the black beans and heat through, stirring gently. Season with additional salt, pepper, or spices if desired.

            Assemble the Bowls: In serving bowls, layer a generous portion of the fluffy rice, top with the black bean and vegetable mixture, and add sliced chicken on top.

              Serve and Garnish: Top with fresh chopped cilantro and sliced avocado. Drizzle with hot sauce if desired, and enjoy your Cuban Chicken & Black Bean Rice Bowls!
