Crispy Chilli Beef (with Sweet Chilli) - Chinese Shredded Beef

Ingredients
  

500g beef flank or sirloin, thinly sliced against the grain

1 cup cornflour (cornstarch)

1/2 cup all-purpose flour

1 tsp baking powder

2 tsp garlic powder

1 tsp ground black pepper

1/2 tsp salt

1/2 cup vegetable oil (for frying)

1 red bell pepper, sliced into thin strips

1 green bell pepper, sliced into thin strips

1 onion, sliced

3-4 spring onions, chopped

3-4 cloves garlic, minced

1 fresh red chilli, chopped (or to taste)

1/2 cup sweet chilli sauce

1 tbsp soy sauce

1 tbsp rice vinegar

1 tsp sesame oil

Fresh coriander, for garnish (optional)

Instructions
 

Prep the Beef: In a bowl, combine the sliced beef with soy sauce, rice vinegar, and sesame oil. Let it marinate for at least 30 minutes to enhance the flavour.

    Make the Coating: In another bowl, mix cornflour, all-purpose flour, baking powder, garlic powder, black pepper, and salt thoroughly.

      Coat the Beef: Remove the marinated beef from the marinade and coat each slice evenly in the flour mixture. Shake off any excess flour.

        Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

          Fry the Beef: Once the oil is hot, carefully add the coated beef slices in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes per side until golden and crispy. Remove and drain on paper towels.

            Stir-fry Vegetables: In the same pan, add a little more oil if necessary, then stir-fry the sliced onion, bell peppers, and minced garlic over high heat for about 2-3 minutes until they're tender-crisp.

              Combine: Add the crispy beef back to the pan with the vegetables. Pour in the sweet chilli sauce and chopped fresh chilli, tossing everything together until the beef is coated in the sauce and heated through.

                Serve: Remove from heat, garnish with chopped spring onions and fresh coriander if desired. Serve hot with steamed rice or noodles.
