Crispy Bang Bang Salmon Bites (Sweet & Spicy)

Ingredients
  

1 lb salmon fillet, skinless and boneless, cut into 1-inch cubes

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Vegetable oil, for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon lime juice

1 teaspoon honey

Salt to taste

Prepare the Bang Bang Sauce: In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, honey, and a pinch of salt. Adjust the spiciness as desired and set aside.

    Coat the Salmon Bites: In a shallow dish, combine the flour, garlic powder, paprika, salt, and pepper. Place the beaten eggs in another shallow dish and the panko breadcrumbs in a third dish.

      Dredge the Salmon: Dip each salmon cube first in the flour mixture, shaking off excess, then into the beaten eggs, and finally coat with the panko breadcrumbs, pressing gently to adhere.

        Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom of the pan (about 1/4 inch deep) and heat over medium-high heat until shimmering.

          Fry the Salmon Bites: Carefully add the coated salmon bites to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy. Use a slotted spoon to transfer the fried bites to a paper towel-lined plate to drain excess oil.

            Serve: Arrange the crispy salmon bites on a serving platter and drizzle generously with the Bang Bang sauce. Garnish with chopped green onions or sesame seeds, if desired.
