Crispy Bang Bang Chicken

1 pound chicken breast, cut into bite-sized pieces

1 cup all-purpose flour

1 tablespoon cornstarch

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (adjust for spice preference)

2 eggs, beaten

1 cup panko bread crumbs

1 cup vegetable oil (for frying)

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust for heat)

1 teaspoon lime juice

1 teaspoon honey

Prepare the Chicken: In a large bowl, combine the flour, cornstarch, garlic powder, paprika, salt, black pepper, and cayenne pepper. Mix well.

    Coat the Chicken: Dip each piece of chicken first in the beaten eggs, then dredge in the flour mixture to coat thoroughly. Repeat for all chicken pieces.

      Bread the Chicken: After coating in the flour mixture, press each piece into the panko bread crumbs until well coated.

        Heat the Oil: In a large skillet over medium heat, add the vegetable oil. Heat until shimmering (approximately 350°F or 175°C).

          Fry the Chicken: Carefully add the breaded chicken pieces in batches to avoid overcrowding the skillet. Fry until golden brown and cooked through, about 5-7 minutes per batch. Remove and place on paper towels to drain excess oil.

            Make the Bang Bang Sauce: In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, and honey until smooth and well combined.

              Serve: Drizzle the bang bang sauce over the crispy chicken or serve it on the side as a dipping sauce. Garnish with chopped green onions or sesame seeds if desired.
