1 lb chicken breast, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

2 teaspoons paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for spice level)

1/2 teaspoon salt

1/2 teaspoon black pepper

Vegetable oil, for frying

1/2 cup mayonnaise

1/4 cup sweet chili sauce

2 teaspoons sriracha (optional, for extra heat)

Fresh green onions, chopped, for garnish

Sesame seeds, for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with buttermilk. Cover and refrigerate for at least 1 hour (or overnight for best results).

    Prepare the Breading: In a large bowl, mix together flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until well combined.

      Heat the Oil: In a large pan or deep fryer, heat vegetable oil to 350°F (175°C). Ensure you have enough oil to submerge the chicken pieces for frying.

        Dredge the Chicken: Remove chicken from the buttermilk marinade, allowing excess liquid to drip off. Dredge each piece in the flour mixture, pressing it gently to ensure a good coating. Shake off any excess flour.
