Creamy Chicken Sausage Orzo Skillet

Ingredients
  

1 lb chicken sausage, sliced

1 cup uncooked orzo pasta

4 cups chicken broth

1 medium onion, diced

2 cloves garlic, minced

1 cup heavy cream

1 cup spinach, roughly chopped

1 cup cherry tomatoes, halved

1 tsp dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 tbsp olive oil

Grated Parmesan cheese for serving

Fresh parsley for garnish (optional)

Instructions
 

In a large skillet, heat olive oil over medium heat. Add the sliced chicken sausage and sauté until browned, approximately 5-7 minutes. Remove sausage from the skillet and set aside.

    In the same skillet, add diced onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and cook for an additional 1 minute until fragrant.

      Add the uncooked orzo to the skillet and stir for about 1-2 minutes until lightly toasted.

        Pour in the chicken broth, add the dried Italian herbs, and bring to a simmer. Cook, stirring occasionally, for about 8-10 minutes or until the orzo is al dente and most of the liquid has been absorbed.

          Reduce heat to low and stir in the heavy cream, chopped spinach, and cherry tomatoes. Return the cooked chicken sausage to the skillet. Mix well and allow to simmer for another 2-3 minutes until everything is heated through and creamy. Season with salt and pepper to taste.

            Serve hot, topped with freshly grated Parmesan cheese and chopped parsley if desired.
