Creamy Chicken Bacon Ranch Pasta – The Ultimate Comfort Food!

8 oz penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

6 slices of bacon, chopped

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 packet (1 oz) ranch seasoning mix

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 cup fresh spinach

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package directions until al dente. Drain and set aside.

    Cook the Bacon: In a large skillet over medium heat, add chopped bacon and cook until crispy. Use a slotted spoon to transfer the cooked bacon to a paper towel-lined plate, leaving the bacon fat in the skillet.

      Sauté Chicken: In the same skillet with the bacon fat, add olive oil if necessary. Add the diced chicken to the skillet, season with salt and pepper, and cook until golden brown and cooked through, about 6-8 minutes. Remove chicken from the skillet and set aside with the bacon.

        Prepare the Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and ranch seasoning mix, mixing well.

          Incorporate Cheese: Gradually stir in the grated Parmesan cheese until melted and the sauce is creamy and smooth.

            Combine Ingredients: Return the cooked chicken and bacon to the skillet. Add the cherry tomatoes and fresh spinach, cooking until the spinach is wilted and the tomatoes are slightly softened.

              Mix with Pasta: Add the cooked penne pasta to the skillet, tossing everything together until well combined and heated through. Adjust seasoning with more salt and pepper if needed.
