Creamy Cajun Chicken Pasta

8 oz fettuccine or linguine pasta

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), sliced

1 cup heavy cream

1 cup chicken broth

1 cup shredded Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: crushed red pepper flakes for extra heat

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or linguine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Season the Chicken: While the pasta cooks, season both sides of the chicken breasts generously with Cajun seasoning.

      Cook the Chicken: In a large skillet over medium-high heat, heat olive oil. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side or until golden brown and cooked through (internal temperature of 165°F). Remove from the skillet and let rest for a few minutes, then slice into strips.

        Sauté the Vegetables: In the same skillet, add the diced onion and sliced bell pepper. Sauté for about 3-4 minutes or until softened. Add minced garlic and cook for an additional 1 minute until fragrant.

          Make the Sauce: Pour in the chicken broth and bring to a simmer. Add the heavy cream and stir to combine. Gradually sprinkle in the Parmesan cheese, stirring continuously until the cheese is melted and the sauce is creamy. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

            Combine: Add the cooked pasta and sliced chicken to the skillet. Toss everything together until well coated in the creamy sauce. Season with salt, pepper, and additional Cajun seasoning or crushed red pepper flakes to taste.

              Serve: Divide the creamy Cajun chicken pasta among plates and garnish with chopped fresh parsley. Serve immediately and enjoy!
