Ingredients
  

1 lb boneless, skinless chicken thighs

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper, to taste

2 cups corn (fresh, canned, or frozen)

1 tablespoon butter

1/4 cup mayonnaise

1/4 cup sour cream

1 tablespoon lime juice

1/2 cup crumbled feta cheese

1/4 cup fresh cilantro, chopped

8 small corn tortillas

Lime wedges for serving

Extra cilantro for garnish

Instructions
 

Prepare the Chicken: In a bowl, mix olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and pepper. Add the chicken thighs and coat them thoroughly with the spice mixture. Marinate for at least 20 minutes (or up to 2 hours in the fridge for extra flavor).

    Cook the Chicken: Heat a skillet over medium-high heat. Once hot, add the marinated chicken thighs and cook for about 6-7 minutes per side, or until fully cooked and golden brown. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

      Prepare the Street Corn Sauce: In the same skillet, add butter and corn. Sauté for about 5-7 minutes until the corn is slightly charred and heated through. Remove from heat and let it cool slightly.

        Mix the Sauce: In a bowl, combine mayonnaise, sour cream, lime juice, and crumbled feta cheese. Stir in the sautéed corn and half of the chopped cilantro. Adjust seasoning with salt, pepper, and more lime juice if desired.

          Warm the Tortillas: In the skillet, warm the corn tortillas for about 30 seconds on each side until they're soft and pliable.

            Assemble Tacos: On each tortilla, add a few slices of chicken, a spoonful of the street corn mixture, and top with additional cilantro.

              Serve: Serve with lime wedges on the side for extra zesty flavor.
