Coconut Chicken Rice Bowl

1 pound chicken breast, diced

1 cup coconut milk

2 cups jasmine rice

1 tablespoon olive oil

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon soy sauce

1 tablespoon lime juice

1 teaspoon turmeric powder

1 teaspoon salt

1/2 teaspoon black pepper

1 cup mixed vegetables (bell peppers, peas, carrots)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Rinse the jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water, 1 cup of coconut milk, salt, and turmeric. Bring to a boil and then reduce to a simmer, covering for about 15-20 minutes, or until the rice is cooked and liquid is absorbed. Fluff with a fork once done.

    In a large skillet, heat olive oil over medium heat. Add in the diced chicken, seasoning with black pepper and a pinch of salt. Cook for about 5-7 minutes, until the chicken is golden brown and cooked through.

      Add garlic and ginger to the skillet with the chicken, cooking for 1-2 minutes until fragrant. Stir in soy sauce and lime juice, mixing well to coat the chicken evenly.

        Toss in the mixed vegetables, stirring until they are heated through and vibrant, about 3-4 minutes.

          To serve, place a generous scoop of coconut rice in a bowl, top with the coconut chicken and vegetable mixture. Garnish with fresh cilantro and serve with lime wedges on the side.
