Cinnamon Sugar French Toast Muffins

6 slices of stale bread (challah or brioche works best)

3 large eggs

1 cup milk

1/4 cup heavy cream

1/4 cup granulated sugar

1 tsp vanilla extract

1 tsp ground cinnamon

1/4 tsp salt

1/2 cup brown sugar

1 tsp ground cinnamon (for topping)

1/4 cup unsalted butter, melted (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick spray or butter.

    Prepare the Bread: Cut the stale bread into small cubes, roughly 1-inch pieces. This will help them soak up the custard mixture.

      Make the Custard: In a large mixing bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, 1 teaspoon ground cinnamon, and salt until well combined.

        Combine the Ingredients: Add the bread cubes to the custard mixture and gently stir to ensure all the bread pieces are soaked. Allow it to sit for about 10 minutes so the bread absorbs the custard.

          Fill the Muffin Tin: Spoon the soaked bread mixture into the greased muffin tin, filling each cup about 3/4 full.

            Prepare the Topping: In a small bowl, mix the brown sugar, 1 teaspoon ground cinnamon, and melted butter until crumbly. Sprinkle this mixture generously over the filled muffin cups.

              Bake: Bake in the preheated oven for 20-25 minutes, or until the muffins are puffed and golden brown on top.

                Cool and Serve: Once baked, remove from the oven and let them cool for a few minutes. Gently loosen the edges with a knife and remove the muffins from the tin. Serve warm, optionally drizzling with maple syrup or a dusting of powdered sugar.
