Chinese Beef and Broccoli

Ingredients
  

1 lb (450g) flank steak, thinly sliced against the grain

2 cups fresh broccoli florets

3 tablespoons soy sauce (low-sodium if preferred)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon sesame oil

3 cloves garlic, minced

1-inch piece ginger, grated

2 tablespoons vegetable oil (for cooking)

1/4 cup beef broth

2 green onions, sliced (for garnish)

Cooked rice or noodles (for serving)

Instructions
 

Marinate the Beef: In a medium bowl, combine the sliced flank steak, 1 tablespoon soy sauce, cornstarch, and sesame oil. Mix well to coat the beef evenly. Let it marinate for at least 20 minutes.

    Blanch the Broccoli: Bring a pot of water to a boil. Add the broccoli florets and blanch for 2-3 minutes until vibrant green and just tender. Drain and immediately transfer to an ice bath to stop the cooking process. Drain again and set aside.

      Cook the Beef: In a large wok or skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the marinated beef in a single layer and cook without stirring for about 1-2 minutes until the underside is browned. Stir-fry the beef for another 1-2 minutes until cooked through. Remove the beef from the pan and set it aside.

        Prepare the Sauce: In the same wok, add the garlic and ginger, and stir-fry for about 30 seconds until fragrant. Pour in the remaining 2 tablespoons of soy sauce, oyster sauce, and beef broth, stirring to combine.

          Combine Everything: Return the cooked beef to the wok and toss it with the sauce. Add the blanched broccoli and cook together for another 2-3 minutes, allowing the flavors to meld and the sauce to slightly thicken.

            Serve: Remove from heat and garnish with sliced green onions. Serve the beef and broccoli hot over steamed rice or noodles.
