1 pound elbow macaroni

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 pound ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

2 cups beef or vegetable broth

1 cup shredded sharp cheddar cheese

Salt and pepper to taste

Fresh cilantro or green onions for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Sauté Aromatics: In the same pot, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

      Brown the Meat: Add the ground beef or turkey to the pot. Cook until browned and no longer pink, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.

        Add Beans and Tomatoes: Stir in the kidney beans, black beans, and diced tomatoes (with juices) into the pot.

          Season: Add chili powder, cumin, smoked paprika, and season with salt and pepper. Mix well to combine all the ingredients.

            Combine with Broth: Pour in the beef or vegetable broth. Bring the mixture to a simmer. Cook for about 10 minutes, allowing flavors to meld, stirring occasionally.

              Mix in Pasta: Add the cooked macaroni to the pot, stirring to combine everything well. Allow it to heat through for another 2-3 minutes.

                Cheesy Finish: Remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy.
