Ingredients

2 packs of instant ramen noodles (discard seasoning packets)

1 lb (450g) boneless, skinless chicken breasts, thinly sliced

2 tablespoons vegetable oil

1 cup broccoli florets

1 red bell pepper, sliced

1 carrot, julienned

2 green onions, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional)

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust to taste)

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Instructions

Cook the Ramen: In a pot of boiling water, cook the ramen noodles according to package instructions for about 3-4 minutes until tender. Drain and set aside.

Prepare the Chicken: While the noodles are cooking, heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced chicken and cook until it's browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

Stir-Fry the Veggies: In the same skillet, add another tablespoon of vegetable oil. Add the broccoli, bell pepper, and carrot. Stir-fry for about 3-4 minutes until they are tender-crisp.

Add Aromatics: Stir in the minced garlic and grated ginger into the vegetables, cooking for an additional minute until fragrant.

Combine Everything: Return the cooked chicken to the skillet and add the cooked ramen noodles. Pour in the soy sauce, oyster sauce (if using), sesame oil, and red pepper flakes. Toss everything together gently until well combined and heated through, about 2-3 minutes.

Serve: Remove from heat and garnish with chopped green onions, sesame seeds, and cilantro if desired. Serve hot and enjoy your Chicken Ramen Stir Fry!
