Chicken Broccoli Casserole

2 cups cooked, shredded chicken breast

3 cups fresh broccoli florets (steamed)

1 cup cooked brown rice or quinoa

1 cup shredded sharp cheddar cheese

1 cup cream of mushroom soup (or homemade equivalent)

½ cup mayonnaise

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

1 cup crushed Ritz crackers (for topping)

2 tablespoons melted butter

Chopped fresh parsley (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Prepare Casserole Mix: In a large mixing bowl, combine the shredded chicken, steamed broccoli, cooked brown rice or quinoa, ½ cup of the cheddar cheese, cream of mushroom soup, mayonnaise, garlic powder, onion powder, salt, and pepper. Stir until well mixed.

      Transfer to Baking Dish: Grease a 9x13 inch baking dish, then pour the chicken and broccoli mixture into the dish, spreading it out evenly.

        Add Cheese: Sprinkle the remaining cheddar cheese over the top of the casserole.

          Prepare Topping: In a small bowl, mix the crushed Ritz crackers with the melted butter until well combined. Sprinkle this mixture evenly over the cheese layer.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.

              Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
