Chicken Avocado Melt Sandwich

2 cups cooked chicken, shredded

1 ripe avocado, mashed

1 tablespoon lime juice

1 teaspoon garlic powder

½ teaspoon salt

¼ teaspoon black pepper

4 slices of whole grain bread

4 slices of cheddar cheese

2 tablespoons mayonnaise

1 tablespoon fresh cilantro, chopped (optional)

1 ripe tomato, sliced

Butter or olive oil for toasting

Instructions
 

In a medium bowl, combine the shredded chicken, mashed avocado, lime juice, garlic powder, salt, black pepper, and cilantro (if using). Mix well until fully combined.

    Spread a thin layer of mayonnaise on one side of each slice of bread. This will add flavor and help with crispiness.

      On the non-mayo side of two slices of bread, layer a generous portion of the chicken and avocado mixture, followed by a few slices of tomato and a piece of cheddar cheese.

        Place the other two slices of bread on top, mayo side up.

          Heat a skillet over medium heat and add a little butter or olive oil to coat the bottom.

            Once heated, carefully add the sandwiches to the skillet. Cook for about 2-3 minutes or until golden brown, then flip and cook the other side until the cheese is melted and the bread is crispy.

              Remove from the skillet and let cool for a minute before slicing in half. Serve warm and enjoy your delicious Chicken Avocado Melt Sandwich!
