Cheesy Masala Beans on Toast

1 can (15 oz) of kidney beans, rinsed and drained

1 tablespoon olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon ginger, minced

1 green chili, finely chopped (adjust to taste)

1 teaspoon ground cumin

1 teaspoon ground coriander

½ teaspoon turmeric powder

1 teaspoon garam masala

¼ cup tomato puree

1 cup shredded cheese (cheddar or a blend of cheeses)

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

4 slices of bread (your choice: whole grain, sourdough, etc.)

Butter (for spreading)

Instructions
 

Heat the Oil: In a medium pan, heat the olive oil over medium heat. Add the chopped onions and sauté until golden brown, about 5-7 minutes.

    Add Aromatics: Stir in the minced garlic, ginger, and green chili, cooking for another 2-3 minutes until fragrant.

      Spice it Up: Add the ground cumin, coriander, turmeric, and garam masala. Stir well to coat the onions and toast the spices for about 1 minute.

        Beans & Tomatoes: Add the rinsed kidney beans and tomato puree to the pan, mixing thoroughly. Season with salt and pepper to taste. Let it simmer for about 5-7 minutes, allowing the flavors to meld.

          Cheesy Goodness: Remove the pan from heat and stir in half the shredded cheese until melted and well combined.

            Prepare Toast: While the bean mixture cools slightly, toast the slices of bread to your desired crispness. Optionally, you can spread a thin layer of butter on each slice after toasting.

              Assemble: Spoon the cheesy masala beans generously over each slice of toasted bread.

                Top with Cheese & Garnish: Sprinkle the remaining cheese on top of the beans, and place the toast under a broiler for 1-2 minutes, just until the cheese is bubbly and golden. Remove from the oven and garnish with fresh cilantro.
