Cheesy Beef Burritos with Crispy Fries

1 lb ground beef

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1 can (15 oz) black beans, drained and rinsed

1 cup cooked white rice

1 tablespoon taco seasoning

1 cup salsa

1 large potato, cut into fries

2 tablespoons olive oil

Salt and pepper to taste

Optional toppings: sour cream, guacamole, sliced jalapeños, chopped cilantro

Prepare the Fries: Preheat your oven to 425°F (220°C). In a large bowl, toss the cut potato fries with olive oil, salt, and pepper until well-coated. Spread them on a baking sheet in a single layer. Bake in the preheated oven for about 25-30 minutes or until crispy and golden brown, flipping halfway through.

    Cook the Beef Filling: In a large skillet, over medium heat, add the ground beef. Cook until browned and fully cooked, about 6-8 minutes. Drain any excess fat. Add taco seasoning and mix well. Stir in the black beans, rice, and half of the salsa. Cook for an additional 2-3 minutes until heated through.

      Assemble the Burritos: Lay out each tortilla on a flat surface. Spoon a generous portion of the beef mixture in the center of each tortilla. Add a tablespoon of salsa and a sprinkle of both cheddar and Monterey Jack cheese on top. Fold in the sides, then roll the tortilla tightly from the bottom up to form a burrito.

        Heat the Burritos: In the same skillet, place the burritos seam-side down and cook on medium heat for about 2-3 minutes until the bottom is golden and crispy. Flip carefully and cook the other side for another 2-3 minutes until both sides are crisp and the cheese is melted.
