Packed with crispy bacon, tender russet potatoes, and a blend of sharp cheddar and mozzarella cheese, this hearty dish is sure to satisfy. With a mix of sautéed vegetables and a creamy egg blend, it's perfect for brunch or any gathering. 6 medium russet potatoes, peeled and diced

8 slices of crispy bacon, crumbled

1 cup sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

1 cup milk

4 large eggs

1 small onion, finely chopped

1 bell pepper (any color), diced

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

Fresh chives, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.

    In a large pot, add the diced potatoes and cover with water. Bring to a boil and cook for 8-10 minutes, just until tender but not mushy. Drain and set aside.

      In a separate skillet over medium heat, cook the bacon until crispy. Remove and let it drain on paper towels, then crumble when cool enough to handle.

        In the same skillet, add the chopped onion and bell pepper. Sauté until softened, about 3-4 minutes. Remove from heat.

          In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and black pepper until well combined.

            In the prepared baking dish, layer half of the cooked potatoes at the bottom. Sprinkle half of the crumbled bacon, onion, bell pepper, and cheddar cheese over the potatoes.

              Pour half of the egg mixture over this layer and repeat with the remaining potatoes, bacon, onion, bell pepper, and cheese.

                Finally, pour the remaining egg mixture over the top, ensuring that it seeps into the layers.

                  Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the center is set and the top is golden and bubbly.

                    Once done, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped chives before serving.
