2 large carrots, grated

1 large apple (such as Honeycrisp or Granny Smith), cored and grated

1/4 cup raisins or dried cranberries

1/4 cup walnuts, chopped (optional)

1/4 cup plain Greek yogurt

1 tablespoon honey

1 tablespoon fresh lemon juice

1 teaspoon cinnamon

Salt and pepper to taste

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the grated carrots and apple.

    Add the raisins or dried cranberries and chopped walnuts (if using) to the bowl and mix well.

      In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, salt, and pepper until smooth.

        Pour the yogurt dressing over the carrot and apple mixture, and toss gently to coat all the ingredients evenly.

          Let the salad sit for about 10 minutes to allow the flavors to meld.
