Butter Steak Bites with Garlic Herb Potatoes

1 lb sirloin steak, cut into bite-sized pieces

4 tbsp unsalted butter, divided

4 cloves garlic, minced

1 tsp fresh rosemary, chopped

1 tsp fresh thyme, chopped

Salt and pepper, to taste

1 lb baby potatoes, halved

1 tbsp olive oil

1 tbsp fresh parsley, chopped (for garnish)

Instructions
 

Prep the Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, or until golden brown and fork-tender, flipping halfway through.

    Cook the Steak Bites: In a large skillet, heat 2 tablespoons of butter over medium-high heat. Season the steak bites with salt and pepper. Once the butter is melted and bubbling, add the steak bites in a single layer (you may need to do this in batches to avoid overcrowding) and sear for 2-3 minutes on each side until they are browned but still medium-rare. Remove them from the skillet and set aside.

      Make the Garlic Herb Sauce: In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter. Once melted, add the minced garlic, rosemary, and thyme. Cook for about 1-2 minutes, stirring frequently, until fragrant but not burnt.

        Combine: Return the steak bites to the skillet with the garlic herb sauce, tossing until well-coated and heated through for another minute.

          Serve: Plate the garlic herb potatoes and top them with the butter steak bites. Drizzle any remaining garlic sauce over the top. Garnish with fresh parsley before serving.
