Buffalo Chickpea Taquitos

1 can (15 oz) chickpeas, rinsed and drained

3 tablespoons buffalo sauce (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded cheese (cheddar or a dairy-free alternative)

8 small corn or flour tortillas

Cooking oil (for frying or spray oil for baking)

Optional toppings: diced avocado, fresh cilantro, vegan sour cream, or extra buffalo sauce

Instructions
 

In a mixing bowl, mash the chickpeas with a fork or potato masher until slightly chunky, leaving some whole to add texture.

    Stir in the buffalo sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper until well combined.

      Add the shredded cheese to the chickpea mixture and stir until evenly distributed.

        Lay a tortilla flat on a clean surface. Spoon about 2–3 tablespoons of the chickpea mixture onto the center of the tortilla.

          Carefully roll the tortilla tightly around the filling, ensuring it holds together well. Repeat with the remaining tortillas and filling.

            For frying: Heat about 1/2 inch of oil in a skillet over medium heat. Once hot, place the taquitos seam-side down and fry for 2-3 minutes on each side until golden brown and crispy. Remove and let drain on paper towels.

              For baking: Preheat your oven to 400°F (200°C). Place the taquitos seam-side down on a baking sheet lined with parchment paper. Lightly spray or brush with cooking oil. Bake for 15-20 minutes, flipping halfway through, until crispy.

                Serve warm, garnished with your choice of toppings such as diced avocado, fresh cilantro, vegan sour cream, or extra buffalo sauce.
