Bow Tie Pasta Salad

12 oz bow tie pasta (farfalle)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1 cup bell peppers (mixed colors), diced

1/2 cup black olives, sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra virgin olive oil

3 tbsp red wine vinegar

1 tsp dried oregano

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, add the bow tie pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Vegetables: While the pasta cooks, chop the cherry tomatoes, cucumber, red onion, and bell peppers. Add them to a large mixing bowl.

      Combine Ingredients: Once the pasta is cooler, add it to the bowl with the vegetables. Stir in the black olives and crumbled feta cheese.

        Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Taste and adjust seasoning if necessary.

          Toss the Salad: Pour the dressing over the pasta and vegetable mixture. Gently toss everything together until well combined.

            Garnish and Chill: Sprinkle chopped parsley over the top and give it another toss. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
