Ingredients

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

3/4 cup buttermilk

For the Chorizo Gravy:

1 pound chorizo sausage, crumbled

1/4 cup all-purpose flour

2 cups whole milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Make the Biscuits:

    - Preheat the oven to 425°F (220°C).

      - In a large bowl, whisk together flour, baking powder, baking soda, and salt.

        - Cut in the cold butter until the mixture resembles coarse crumbs.

          - Stir in the buttermilk until just combined. Do not overmix.

            - Turn the dough onto a floured surface and knead gently 2-3 times. Pat it into a 1-inch-thick rectangle.

              - Cut into rounds using a biscuit cutter or a glass. Place on a baking sheet.

                - Bake for 12-15 minutes or until golden brown. Remove and set aside.

                  Make the Chorizo Gravy:

                    - In a large skillet over medium heat, cook the crumbled chorizo until browned, about 5-7 minutes. Remove excess grease if needed.

                      - Sprinkle the flour over the chorizo and stir to combine. Cook for 1 minute.

                        - Gradually whisk in the milk, ensuring no lumps remain.

                          - Add garlic powder, onion powder, salt, and pepper. Bring to a simmer and cook until thickened, about 5-10 minutes, stirring frequently.

                            - Taste and adjust seasonings as necessary.

                              Serve:

                                - Split the warm biscuits in half and generously ladle chorizo gravy over the top.

                                  - Garnish with fresh parsley before serving.
