Ingredients

3 ripe bananas, mashed

1 cup crushed pineapple (drained)

1/2 cup shredded coconut (unsweetened)

1/2 cup brown sugar

1/4 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1/2 teaspoon ground cinnamon (optional)

1/2 cup chopped walnuts or macadamia nuts (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until it’s light and fluffy. This should take about 2-3 minutes with an electric mixer.

Add Bananas and Eggs: Mix in the mashed bananas until well combined. Then, add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.

Combine Pineapple and Coconut: Gently fold in the crushed pineapple and shredded coconut until evenly distributed in the mixture.

Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon (if using).

Combine Dry with Wet: Gradually add the dry mixture to the wet ingredients, stirring gently until just combined. Do not overmix; it's okay if there are a few lumps. If you'd like, fold in the chopped walnuts or macadamia nuts at this point.

Pour into Pan: Pour the batter into the prepared loaf pan, smoothing out the top with a spatula.

Bake: Place the loaf in the preheated oven and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Cool Down: Once baked, remove the loaf from the oven and let it cool in the pan for about 10-15 minutes. Then transfer it to a wire rack to cool completely.

Serve: Slice and enjoy your delicious Hawaiian Banana Bread warm, at room temperature, or toasted with a pat of butter!
