Ingredients

8 oz fettuccine or spaghetti

2 boneless, skinless chicken breasts, diced

4 strips of bacon, chopped

2 cloves garlic, minced

3 large eggs

1 cup grated Parmesan cheese

1/2 cup heavy cream

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Extra Parmesan cheese, for serving

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

Prepare Chicken and Bacon: In a large skillet over medium heat, add olive oil. Once hot, add the diced chicken, season with salt and pepper, and cook for about 5-7 minutes or until golden and cooked through. Remove the chicken from the skillet and set aside. In the same skillet, add the chopped bacon and cook until crispy. Remove excess fat if necessary.

Combine Additions: Add the minced garlic to the skillet and sauté for about 1 minute until fragrant. Lower the heat and return the cooked chicken to the skillet.

Mix Eggs and Cheese: In a large bowl, whisk together the eggs, grated Parmesan cheese, and heavy cream. Season with salt and pepper.

Combine Pasta and Sauce: Add the cooked pasta to the skillet with the chicken and bacon. Carefully pour the egg mixture over the hot pasta, tossing quickly to combine. The heat from the pasta will cook the eggs gently, creating a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Serve: Remove from heat and serve immediately, garnishing with chopped parsley and additional Parmesan cheese. Enjoy your Best-Ever Chicken Carbonara!
