Ingredients

1 lb (450g) flank steak, thinly sliced against the grain

2 tablespoons oyster sauce

2 tablespoons soy sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

2 cloves garlic, minced

1 inch ginger, minced

1 bell pepper, sliced (any color)

1 cup snap peas

1 onion, sliced

1 tablespoon sesame oil

Salt and pepper to taste

Cooked jasmine rice or steamed rice for serving

Optional: chopped green onions for garnish

Instructions

Marinate the Beef: In a bowl, combine the sliced flank steak with oyster sauce, soy sauce, and cornstarch. Mix well until the beef is fully coated and let it marinate for at least 30 minutes.

Prepare the Vegetables: While the beef is marinating, prepare the bell pepper, snap peas, and onion. Set aside.

Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Cook the Beef: Add the marinated beef to the hot pan in a single layer. Sear for about 2-3 minutes until browned, then stir-fry for another 2 minutes until it's cooked through. Remove the beef from the pan and set aside.

Stir-Fry Vegetables: In the same pan, add a little more oil if needed, then toss in the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant. Add the sliced onion, bell pepper, and snap peas. Cook for 4-5 minutes until tender-crisp.

Combine the Ingredients: Return the cooked beef to the pan with the vegetables. Add the sesame oil, and season with salt and pepper to taste. Stir everything together, allowing the flavors to meld for 2-3 minutes.

Serve: Remove from heat and serve the beef stir-fry over jasmine rice, garnished with chopped green onions if desired.
