BBQ Chicken Grilled Cheese

2 slices of sourdough bread

1 cup cooked, shredded chicken

1/4 cup BBQ sauce (your choice of flavor)

1 cup shredded sharp cheddar cheese

1/4 cup sliced red onion

2 tablespoons butter

Optional: Fresh cilantro or parsley, for garnish

Instructions
 

In a bowl, mix the shredded chicken with the BBQ sauce until evenly coated.

    Heat a non-stick skillet over medium heat. While it's warming up, butter one side of each slice of sourdough bread.

      Place one slice of bread, butter-side down, onto the skillet. Layer half of the shredded cheese on top.

        Add the BBQ chicken mixture over the cheese, then layer the sliced red onion evenly across.

          Sprinkle the remaining cheese on top of the chicken and finish by placing the second slice of bread on top, butter-side up.

            Cook for about 4-5 minutes, until the bottom slice is golden brown. Carefully flip the sandwich over using a spatula.

              Cook the other side for another 4-5 minutes, pressing down gently to ensure even toasting and melting of the cheese.

                Once both sides are crispy and golden, remove the sandwich from the skillet. Let it sit for a minute before slicing.
